This paper has been prepared under the auspices of the FAO programme on "Enhancing Food Quality and Safety by Strengthening Handling, Processing and Marketing in the Food Chain". It has been prepared on the basis of eight case studies commissioned by FAO in 2004. The paper concentrates on the issue of how to improve quality and safety in traditional marketing systems for fresh horticultural produce.
